I think I will make this on one of the 90 degree days coming up. It sounds yummy.

Spicy Green Papaya Salad
1 green papaya
1 Thai chili pepper
1/4 c. unsalted peanuts
cilantro
2 tsp. sugar
1 clove garlic
2 tomatoes
1 to 2 tbsp. fish sauce
Shred the green papaya with a cheese grater or similar instrument that yields long strips. Set aside. With a mortar and pestle, grind chili pepper, peanuts, cilantro, sugar, and garlic. Add fish sauce, papaya and tomatoes and continue to mash up until thoroughly mixed.
Serving Suggestion:
Serve cold with slices of cucumber and hot rice on the side.
Yield: 6 servings
Serving Size: 1/4 cup
Approximate Diabetic Exchange: 1/4 Fruit; 1/4 Vegetable; 1/4 Fat; 1 Starch (with 2 cups rice)

btw, I just got a plain old papaya. Nothing was labeled green papaya. Still tasted really good. I don't know if it was the wrong kind or not. It was green on the outside...
maybe "green" means not ripe. I know there is a thai green/unripe mango dish.

Central Market says this is the green papaya I was looking for. About 3 times as big. And unripe.
I made another batch with this one. Perfect. Although I'm a little upset my mortar and pestle can't handle the whole thing at once.
