I made red beans and rice yesterday. I didn't make it the way the old fat guys in New Orleans make it. I just used what I had.
-a couple of cans of kidney beans partially drained
-1 big juicy jalepeno, chopped
-1 tiny red hot pepper, chopped
-1/2 onion, chopped
-3 slices of turkey bacon*, chopped
-1 bay leaf
-1 cup water
season to your liking
-garlic powder
-dried oregano
-dried thyme
-black pepper
-white pepper
-cajun seasoning powder
-tabasco
I simmered it for about 30 minutes and served it over fluffy rice. I ended up adding more water during cooking and again after it was finished. In the future I will start with more liquid and use a couple more slices of bacon for more salty goodness. Delish.
*This particular brand of turkey bacon (I forgot to note the brand) is "100% natural with coloring provided by beets and paprika". It is a GOOD turkey bacon. Imagine that.




Yummm. I need more people living in my house. I already have more potato/sausage hash than I want to eat, and more apple crisp than I should. But since I HAVE all of those ingredients*, it is sooo tempting.

*I take it back. I don't possess any turkey bacon, good or otherwise. But I'm intrigued by the concept of good turkey bacon.
**also, some of these ingredients are supposed to go to the burritos I bought fancy spelt tortillas for. When I will eat those, I don't know.
Had to look up spelt. At first I thought it might be a typo. I breifly thought perhaps the name of the tortilla was spelled in a fancy way, but then realized you had "spelt" it normally. Then I looked it up at dictionary.com and learned that it's a "hardy wheat grown mostly in Europe for livestock feed". So why are you making livestock feed burritos?

Spelt is healthier. Duh. More fiber, protein, and B-vitamins. I'm not a big fan of whole wheat tortillas anyway, so I thought I'd try them out.
