Tuscan rice and beans

Tuscan rice and beans (adapted from ashtrayrecipes.com. That's right. Ashtray recipes.

1/4 cup olive oil
1 cup chopped onions
2 cloves of garlic, minced
2 cups canned, chopped tomatoes, drained
1/2 pound spinach
1 can rinsed white beans
1 1/4 quarts cooked rice
3-4 cooked and chopped Italian chicken sausages
3 tablespoons fresh, chopped mint
2 tablespoons red wine vinegar
2 tablespoons dry sherry
salt & pepper

Heat the olive oil and saute the onions until clear, about 5 minutes.

Add the garlic, tomatoes and spinach and cook until the spinach starts to wilt, about 3-5 minutes.

Add the remaining ingredients and heat through.

I like this recipe because it's quick and delicious. It's a one pot wonder! As long as I remember to cook up some rice the day before, I can make this in 10 minutes. The first time I made this I added chopped chicken breast in with the onions which was tasty but the sausages make it tastier I think. I haven't tried the original recipe that I adapted it from (I never seem to have enough white beans on hand) but it is equally delicious I'm sure. Some other variations that I've considered include leaving the juice in the tomatoes, using more tomatoes, and using lemon juice. (I can never have too much tomato or too much lemon.)

The end result = "Italian Jambalaya". Enjoy.

That does look really good! I think I will save this one! I have a collection of recipes that I save but then always forget about them. I really need to work on that more. My old manager had a good idea that once per month she would try a new recipe and have her family over and make a big deal out of it. She was brave though. I don't dare make new recipes unless it is just my own family cause most the time we don't like them. So usually I take other's recommendations such as yours. I have never heard of chicken sausages thouugh...

Really? You haven't heard of chicken sausage? How about Italian chicken sausage? That's what I meant. I'm sure you've cook w/ those.
